Constraint of the Week: The Unknown Dish

The Unknown Dish, Constraint #61

Cook a dish you’ve never made. Without help, without consulting a recipe. Just the ingredients, your memory, and your instinct. Eat the result, whatever it turns out to be.

Reference artist(s): George Brecht.

The protocol

  1. Choose a dish you’ve eaten at someone’s home, in a restaurant, or imagined but never cooked.
  2. Buy the ingredients you think are necessary… from memory, by logic, by intuition.
  3. Cook. Without opening a recipe site, without asking an AI. Your approximate understanding of the thing is the constraint.
  4. Eat the result. Even if it’s a failure. Note what worked and what didn’t.
  5. Photograph the finished dish. Write the recipe after the fact… what you actually did, not what you should have done. Submit both on the site.

Variants

  • Do it with a dish from a culture you don’t know.
  • Invite someone to dinner without telling them it’s a dish you’ve never made.
